hi

for controlling stepper motors and DC motors which microcontroller i should use?
how one classifies the microcontrollers.

secondly i wanted to know which motor would be better if i want to build a project which handles movement of any object mannually. 4 axis control is in my mind.

which software i should use to program a microcontroller(assembly language or otherwise).

The problem is too much choice

Any microcontroller can control a stepper motor, for DC motors it will depend on how you drive them.
An ADC and PWM would probably be handy,but most microcontrollers have them.
Probably the only ones to rule out are those without a serial port as they are so handy.

Which motor ?
It really depends on your budget, your mechanics
and the size of item you are handling.

Asm or C... surprise.. you can use either,
it mainly depends on which you feel most comfortable with.

well budget is not a problem. which motor is most smooth in working and could carry load of 800gms.

motor with smaller step angle is much smoother, whereas DC motors are easy to find in different size and different speed and power (in short lot of variety). DC motors are way cheaper than steppers.

you need to see the torque specs of motor and obviously more torque is better to drive your load.
