The problem is that you are asking for a complete project.
If no one here has done that, we can't provide one.
I can't find any on the Web either.

As we don't have a working project you would have to build it.
We have projects that use an 8952 and an LCD that could be adapted.
We have code for IC2 but it would need changes to use the Max30100.
We/you would then need to adapt Max30100 software from the web to get results.

There is a lot that could go wrong.
A working project is usually the result of a lot of trial and error.

Getting useful results is complicated and as I/we have
no experience with this chip,you could end up getting stuck
with a non-working project.


Do you have a working 8952 and LCD board?
Have you done much programming ?
